We lay the grapes on apposite boxed where we leave them to dry, for three months, and around Christmas time we choose the best grapes and press them . We put the grape must in 100 lt. oak wood cartels where we keep it for five years. During this period the wine ferments and almost all of the sugar is transformed into alcohol. The cartels are then emptied and filled again. Lastly we bottle the wine.
