Vinification:
Careful handpicking of the grapes in the vineyards. Soft pressing of the macerated grapes with a pneumatic press.The must ferments at a controlled temperature of 15 ° in stainless steel tanks and cement vats with the help of selected yeasts (Saccharomyces Cerevisiae) which have GMO Free certification.
Follows the natural stabilization in external tanks and the aging in steel and concrete tanks for 4-8 months and, later, aging in the bottle for at least 4 months.
